A Call to Sweets and a Call to Prayer
You might be glad to know that I listened to the Body of Christ, who was telling me to take something nice to my neighbor after our unfortunate introduction at the hands of the beast. So last night I made a batch of butterscotch haystacks and I hope to distribute them to that family and to my other neighbors this evening. I will be leaving Beckham at home when I go. This is normally a treat I make at Christmas. But hay is a fall thing, right?
Here is the recipe I used in case anyone wants to give them a try.
Butterscotch Haystacks
1 cup of butterscotch chips
1/2 cup of peanut butter
1/2 cup of Spanish peanuts
2 cups of La Choy chow mein noodles
Heat the peanut butter and butterscotch chips on 50% power for 3-5 minutes. Stir, then add noodles and peanuts. Drop by teaspoonfuls onto wax paper. Let them harden and then eat 'em all up!
*I like to go lighter on the peanut butter and heavier on the noodles, but that's just me. The peanut butter definitely makes it easier to work with. I was so happy that I ended up buying way more chow mein noodles than I needed because I really like to eat them plain. They are tasty!
Here's what they look like. The recipe makes a lot more than this. I didn't keep track of the exact amount because I made it a few times over. Eek!

Also, let's remember to pray for our Bible study leaders today. Many of them are in the home stretch as we all reach the half-way point or final weeks of our Bible studies. The Esther group in Houston only has two more sessions after tonight. (Although Beth still has tons of writing left to do.) I'm sure our Bible study leaders could use our encouragement and our prayers as they aim to end strong in the Lord Jesus! Way to go, leaders!

It was such a cool surprise to see a recipe for haystack cookies on the blog today. I make these as well only I use chocolate as well. I would tell you the amounts but I can't find the recipe. I guess I should probably organize all my recipes so that the ones I only use once or twice a year will not get lost. My favorite thing to make during the fall is hard to name because there are so many things I enjoy making.
I think it is a great idea to take the cookies to your neighbors.
We started our ladies bible study last week. (Yes, I am leading it) It runs every other week. We are doing the book of Daniel with Beth. We had about 22 ladies there. I live in a small town so this is a great number to have. I would be grateful if you all prayed that all the women who came would stick with the study till we finished it.

My favorite thing any time is when you go to the grocery store and buys some cookies or something already packaged. The kitchen and me are a dangerous combination.
Ashley's Pumpkin Bread
3 cups sugar
3 1/3 cups flour
2 tsp. baking soda
1 1/3 tsp. salt
1 tsp. cinnamon
1/2 tsp. baking powder
1/2 tsp. ground nutmeg
1/2 tsp. ground cloves
4 eggs
1 cup water
1 cup oil
1 (15oz) can pumpkin
Preheat oven to 350. Grease 3 (8x4 in.) loaf pans. Mix all ingredients together. Pour into loaf pans and bake for 55 minutes or until a toothpick comes out clean. This makes 3 loaves and is GREAT to give out at Christmastime too. Sometimes, I use smaller loaf pans and have a lot more to give out. It's delish!

My NEW very favorite thing is....Candy Bar Cookies...taking left over candy bars (OK, so I bought some for this!!!! What is left over candy?? Ü) Chop up about 2 cups worth of candy (I used Snickers, Butterfingers, Kit Kat, Baby Ruth, Reese's, Hershey bar, (they were minis) and mix them into cookie dough and bake as usual....YUMMY! I'm making more tonight!!

We are on a special diet for our special needs son - He was a drug exposed infant that we adopted - it is amazing what drugs do to a baby during pregnancy. Our son is very much like an autistic child, yet different. But, back to the diet - "if it doesn't rot or sprout, throw it out" that is our moto - & it is so working!! GOD is soooooooo (can never get enough o's) good!! Our non-verbal boy now has 20 words (He is almost 7) - & a good grasp of the vowel sounds. So we've had to get creative. An apple peeled, & cored, with a pat of real butter, some cinnamon, & a teaspon of real maple syrup - baked during dinner, in a moderate oven, or microwaved for 2-4 min - depending. I've even done this in the crock pot on low for the afternoon. Also great with pears, or even a hard squash like butternut or acorn - just have to cook longer - We even mash sweet potatoes, & then garnish with the same ingredients. I'm so thankful to the LORD for helping me to have an adventuresome attitude about this because it has been a radical change, but as we see our child thrive more each day, it is so worth it!! - Please pray with this Mamma though.... Holiday deserts are just around the corner!! My mouth waters just thinking about it! - Only by the Grace of GOD will I survive - I can do all things thru Christ - even resist Chocolate!! - Praying with you Amanda, that GOD will use the wild introduction for something glorious!- mistie woods - Abilene

Thank you so much for the reminder to pray for Bible study leaders at this critical time. I am leading Believing God with about 25 ladies on Sunday nights. So far, all have remained in the study -- sort of a remarkable thing! Pray for me as I have had some opposition this week to deal with concerning another one of our studies and some potentially unbiblical opinions being shared in the class and in my own class the girls are so on fire about the study that they are asking extremely difficult questions of this feet of clay facilitator! I'm reading the Word so much these days I had to go and buy me a large print Bible just so my eyes wouldn't conk out on me! (Is "conk" a word?)
Now on to recipes...
Okay -- this is one the easiest coffee cake/bubble bread/monkey bread (everyone calls it something different) and it is absolutely delicious. I have to thank my former pastor's wife for the recipe. I pray for her everytime I fix it because she is taking care of her husband who has Alzheimers.
1 cup of pecan chips
1 pkg of Rich's frozen rolls
1 large package of instant butterscotch pudding
1 stick of ...gulp... butter, melted
1/2 cup of brown sugar
4 tsps of cinnamon
Spray cooking spray in a bundt or tube pan, coating the entire space.
Spread the pecans on the bottom of the pan, pressing them into the bottom and sort of come up the sides a 1/2 inch or so. They'll stick because of the cooking spray.
Then layer the remaining ingredients in the order they are listed, pouring the ...gulp... butter over the rolls and combining the brown sugar and cinnamon before sprinkling it on top of the other ingredients.
Cover with plastic wrap and let rise overnight on the kitchen counter.
Bake for 25 minutes at 350. Allow to cool for about 10 minutes and then gently loosen the sides with a spatula. Place a plate on top and then turn it over for presentation.
DELICIOUS!

The BEST EVER Apple Cobbler
(I have had family members and church members request this one over and over!)
1 cup sugar
1 cup self-rising flour
3/4 cup milk
1-2 cans of apple pie filling
1 stick of butter
Set oven at 350. Melt butter.
In another bowl, mix sugar, milk, and flour. Pour directly on top of melted butter. Pour apple pie filling over on top. Bake for 1 hour.
If you prefer more crust, you can double the crust recipe or just only use 1 can of filling.
Enjoy!
My sister makes something like that around Easter time and calls them Robin's Nests. She shapes them into nests and puts M&Ms in it as eggs.
We are studying Romans in our Bible Study.
I was told about the most awesome thing about a year ago. It's apparently a Weight Watchers dessert recipe, but nobody knows the difference.
Easy Cake Treats:
1 box cake mix (I suggest spice cake)
1 can pumpkin
Mix together. Bake according to cake box instructions.
Does it get any easier than that?!? Since you cut out the egg, oil, etc., it's much healthier than regular cake. You have to stir it a while before it mixes well, but it will eventually combine. You can add 1/2 cup of water if it makes your life easier.
I baked this in a 9x13 pan and sprinkled powdered sugar on top, then cut the cake into 1" squares and arranged them with some other desserts on a pretty platter for Thanksgiving last year. It was a hit and nobody knew how easy it was!

I have a great jalapeno and cranberry relish recipe, but like Kim B., I can't find my recipe. I have 2-1/2 weeks before Thanksgiving to find it. My husband LOVES it...it's great with turkey, chicken, and ham.

Here is a recipe one of my Bible study sisters made for our group one evening a few weeks ago. It was warm and delicious. Although I've not made this yet, she shared the recipe with us.
PUMPKIN DUMP CAKE
Preheat oven to 350 degrees
1 29 oz can of pumpkin
1 13 oz can of evaporated milk
1 1/2 cups sugar
4 eggs
1/2 tsp. salt
2 tsps. pumpkin pie spice
1 yellow cake mix
2 sticks of margarine
Combine pumpkin, evaporated milk, sugar and eggs together and blend well. Add salt and spices and mix well.
Pour into greased 9x13 inch cake pan. Sprinkle 1 yellow cake mix (dry) evenly over pumpkin mix. Melt margarine and drizzle evenly over the cake mixture. Sprinkle 1 cup pecans (optional) over the top. Bake for approximately 1 hour at 350 degrees. Cool and top with Cool Whip.
We'll all be needing some of that work out music after all of the wonderful recipes we'll be trying!
I join in the request for prayer. I am a member of the leadership team of a large (60) women's study and community service group. We are studying Beth's "Beloved Disciple." We have been fiercely attacked. Our group has grown from 5 members to over 70 in less than 3 years. The evil one really wants to defeat this growing ministry. Please remember "Women In Action" (WIA) leadership in your prayers.
OH Yeah, I love those things!! I do pray for the Bible Study Leaders on Tuesday. I know it's Beth's day, because it's our day too. Next to Sunday, Tuesday is my favorite day of the week.
Tomorrow is food day at my office. THEN it's our Fall Family Fun Fest for the community at our church in the evening. Homemade chili, giant inflatable jumpy things (I think we only had one "tragedy" last year. Chili and jumping children....what were we thinking?) It's a big food day from dawn to dusk. I feel sick already. Maybe someone will bring haystacks. Won't be me... I have a Bible Study tonight!!

Our favorite recipe was passed down from my Grandma, who has been with Jesus since 1997, but died at the age of 97, just prior to her 98th birthday; as she was born in 1899! [I always used to think of how neat that was, when I was younger].

Apple Crisp
2 cups flour
1 teaspoon baking powder
3/4 cup granulated sugar (Use 1 cup sugar if apples are tart)
3/4 teaspoon salt
1/2 cup shortening
2 well beaten eggs
Mix all the above ingredients in a bowl. Place 6 to 8 cups of cut up apples in a greased and floured 9x12” baking pan.
Sprinkle 1/2 teaspoon each of cinnamon, nutmeg, and ginger over topping on apples in a pan.
Bake at 350 degrees F for 30 to 40 minutes.

Anonymous, I so identify with you! My nephew is autistic and life is challenging, but it also presents a very different perspective on God's love and grace! My nephew also has the drug induced autism. He is 12 years old and functional, thank goodness! He suffers from seizures as well and the highest activity in the brain is in the speech development area - hence, he is not a talker! My sister has tried everything to include some drugs (she is a naturalist), but love, support, and encouragement are what has brought him to where he is today.
I know Beth references Kendall (spelling?) and the fact that she has Down's all the time. It takes a special family to have special needs kids. God doesn't mess around or make mistakes, so keep loving that son because that is what we are called to do!
I was very inspired by your post and pray that your family is blessed with this little one in your family. They are blessings of a different kind. My mom (his grandmother) created a Sunday School class at church for autistic children. This was to give my sister a chance to attend church with her family, but also to expose my nephew to Jesus. He LOVES church!!

I LOVE haystacks! At our girls' weekend scrapbooking trips that is my usual sweet/salty to take for snacks. They are always a hit. I like to add peanut M&M to the tops so they look like bird's nests (and b/c we all love M&Ms). Thanks, as always, for sharing your life with us and bringing a smile to so many. J
Thanks for the receipe. I have eaten those before but never made them. Here is one of our favorites.
Peanut Butter Drops
3/4 C Sugar
1/2 stick margarine
3/4 Karo syrup
Boil for one minute then add:
3/4 C Peanut Butter
1 tsp vanilla
4 C Special K cereal
Drop by spoonfuls on wax paper. They are really yummy warm.
I noticed someone having trouble organizng their recipes. I read an idea a few years ago and I have kept it up pretty good. Just take all your recipes no matter what they are written on. Get a three ring binder and dividers. Put your recipe behind the appropriate divider. My book has become a hodge podge of recipes written on envelopes, paper etc. but I can always find them. I use to think I had to rewrite them neatly on a recipe card but this is much easier for us busy mom.

I Love to make a brownie pizza with all the fall colored candy on top! make brownies in a pizza pan. use a lower temp, and it only bakes for about half the time! let it cool then spread choc. icing on top then chop up recees cups, use candy corn, whatever you like, and then use the fudge packet that came in the brownie mix and drizzle all over the top!

or...this treat...dont have a name but here are the ingredients...
1 bag pretzel snaps (square, flat pretzels, look like little grids)
1 bag of rolos
1 bag of shelled pecan-halves
Place a rolo in the center of a pretzel snap, heat for 2 min on 200
(just enough for the rolo to attach to the prezel but not melt to lose its shape), take out of oven and while rolo is warm place a pecan half right smack dab in the middle.

Hello all. This is first for me but I feel that it is very important to let you know about one of the Columbia (SC) girls. I am writing to ask for your prayers. My friend,Alice Ann, and I attended the Columbia conference. On July 4th her son was killed in a car accident. This past Saturday, October 27, her father passed away unexpectedly. I know that she would covet your prayers for her and her family. The Lord gave her what she needed before going through these trials in her life through Beth during that weekend. Beth's commissioning that weekend has been a HUGE blessing and encouragement to her. I will thank you in advance for your prayer support for her.

Missy's Chocolate Thangs
(Unbaked chocolate oatmeal cookies)
1/4 cup of coco
1/4 cup of butter
1/4 cup of milk
1 cup of sugar
1 1/2 cup of Old Fashion oats
1/4 cup of peanut butter(Crunchy)
1 TB Vannilla
heat coco, butter, milk and sugar. When it comes to a rapid boil, time it for 1 minute and 30 seconds. Pour the mix over the oats, pb and van and mix throughly. Spoon onto wax paper.
Hint: peel the papper off the cookie not the cookie off the paper! If it is does not harden then extend the cooking time. If too hard, reduce the cooking time.
I haven't left a comment here before, but am a faithful follower of the blogs and comments! I do have an urgent prayer request for a family in great need. And am trying to get the word out to as many people as I can. Please pray with us! There is the most wonderful child of Christ, that is in the hospital right now in critical condition. She suffers from Cystic Fibrosis. Haley is only twelve years old, but has been given such wisdom and strength from God. She is in a hospital room, suffering from this terrible disease that she so bravely and strongly has fought all of her twelve years of life. But this little girl is a shining beacon for God and continues to shine greatly as she is in physical turmoil. Her family has kept a website going of her condition these past few weeks that she has been in the hospital. It has been amazing to read thru the entries and see how many people that Haley has touched without ever meeting her. And I am one of them.
Haley played on my nieces soccer team, so I've had an opportunity to see her (and she's an awesome soccer player despite the disease) but I have never had the chance to talk with her. But this little lady has done more in her life and helped more people than most do in a lifetime. Haley and her family are constantly organizing fundraisers to help find a cure for CF and she has helped raise over $100,000 dollars. She has a wonderful outlook on life and everyone writes about how happy, cheerful, and with a smile on her face! We don't know God's plans for her - but I hope her work on this earth isn't finished. She is a great girl and we could all be led closer to God and outreach others by her examples. Her family are believers, and they know the end could be close. But they are asking for prayers of a miracle to save their precious Haley. They need prayers for peace and strength as they continue this fight over this disease. May I be a bright shining star for Jesus as Haley has been and will continue to be! And thank you for thinking of the Bible Study leaders. We just started Daniel 7 in the two groups that I lead, a morning group of 14 and night group of 22. Tuesdays are really long for me but it is such a blessing to be there with both groups. I wouldn't trade it for anything.

My mom used to make these for us (minus the peanuts). Why haven't I made these for my young 'uns yet? And your right, what better time of year than fall! In seven and one half years I have not tunred on the oven in my house...others are weldome to....and everyone is coming to my house for Thanksgiving since our parents both passed this summer.
Beckham will soon be loved by one and all. A few years back I had a neighbor that literally carried a metal pipe when he would walk outside his off...soon he was inviting my dog inside his house!

This has nothing to do with sweets or prayer, but I just have to share my embarassing story for the day. God sure knows how to keep me humble! I walk my kids to the bus stop each morning(they are 7 and 9). This morning we were running behind so I grabbed my shirt and put it on quickly and we ran out the door. I thought the girls were looking funny at me this morning, but they are 3rd to 5th grade girls so I blew it off. The boys were playing football I don't think they noticed, but I arrived home to discover that not only did I have my short on wrong-side out, but backwards! My tags were there in all their glory at the bottom of my chin! When the day starts that way it can only get better!!! Right?

This was one of my grandmother's recipes and its not pumpkin, spice, and everything nice BUT it is CHOCOLATE and it is a Thanksgiving staple at my mom's house each year!
It is super easy and I hope you'll give it a try. Let me know how it turns out. I also have one for a pumpkin roll that is such a pretty display on any fall table.
Chocolate Chip Pie
2 eggs
1/2 cup self-rising flour
1 cup of chocolate chips
1 stick of butter
1 cup of sugar
1 cup of coconut (optional)
INSTRUCTIONS: Combine eggs, sugar, and flour in a bowl. Mix well.
Melt the butter and add to the mixture.
Add the coconut and chocolate chips.
Pour into an unbaked pie shell.
Bake at 350 degrees for about 25 minutes or
until golden brown on top.
PUMPKIN COOKIES
2/3 cup oil
1 cup sugar
1 egg
1 cup canned pumpkin
2 cups all purpose flour
1 tsp. soda
1 tsp. baking powder
1 tsp. cinnamon
½ tsp. salt
1 tsp. vanilla
Mix first four ingredients with spoon. Add all dry ingredients. Drop by teaspoon on greased sheet. Bake 350 degrees 10-12 minutes.Place on newspaper to completely cool.
ICING
3 tbsp. butter
4 tbsp. milk
½ cup sugar
1 cup powdered sugar
1 tsp. vanilla
Boil first three ingredients for two minutes stirring constantly. Cool and add powdered sugar and vanilla. Frost cookies.
These are the best. My mom made them for us growing up and now I am making them for my friends and family. Everyone loves!

I am a caramel apple girl, myself. Nothing like a Granny Smith covered in ooey gooey delight.
Also praying for Beth as she continues to work on Esther. Maybe it's asking too much, but for us girls who also love to teach and write, it would be fascinating to know the 'process' she goes through to create her studies.
For those who have celiac disease or are gluten-intolerant - peanut butter cookies:
INGREDIENTS
* 2 cups peanut butter
* 2 cups white sugar
* 4 eggs, beaten
* 2 cups semi-sweet chocolate chips (optional)
* 1 1/2 cups chopped pecans (optional)
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheet.
2. Combine peanut butter, eggs, and sugar and mix until smooth. Mix in chocolate chips and nuts, if desired. Spoon dough by tablespoons onto a cookie sheet.
3. Bake for 10 to 12 minutes or until lightly browned. Let the cookies cool on the cookie sheets for 5 to 10 minutes before removing.

Here is a recipe that I love to make during the Fall season. It makes two loaves so you can enjoy one and share one with family, friends, or anyone God puts on your heart. Enjoy!!
Chocolate Chippy Pumpkin Bread
3 c. all-purpose flour
1 t. baking soda
1 t. salt
2 t. cinnamon
4 eggs
2 c. sugar
15-oz. can pumpkin
1-1/4 c. oil
1-1/2 c. semi-sweet chocolate chips
Combine flour, baking soda, salt and cinnamon in a large bowl; set aside. Beat together eggs, sugar, pumpkin and oil in a large bowl; stir into dry ingredients just until moistened. Fold in chocolate chips; pour into two greased 8"x4" loaf pans. Bake at 350 degrees for 60 to 70 minutes, or until a toothpick tests clean. Cool for 10 minutes before removing to wire racks to finish cooling. Makes 2 loaves.

This is my man's favorite and only kind of rice krispie treat!
Chocolate Peanut Butter Krispie Treats
4 TB butter
6 Cups mini-marshmallows
6 Cups Rice Krispies
1/2 - 3/4 Cup peanut butter
1 C chocolate chips
Melt butter, marshmallows, and peanut butter in large Dutch oven, stirring to blend well. When marshmallows are melted, add cereal. Once the cereal is thoroughly coated, add chocolate chips. Place mixture in a butter 9x13 baking dish. Allow to cool. Cut into as LARGE a square as you'd like! =)
Whatever happened to the idea of a Siesta cookbook? I think this is a good start! Is anyone creative out there to set up a blog site where we could just post recipes that would be easy to print out?

Our group has 3 more times to meet. I feel like the enemy is trying to bring disharmony to our group. I'm the facilitator and have tried to keep the unity of our spirits, but the subject matter for discussion these past 2 sessions covers a biblical truth that isn't easy to hear. BTW, this is NOT a Beth Moore study. We've completed all of Beth's and are looking forward to Psalms and Esther. I'd appreciate prayers for our group's unity in spirit.

My mom has been making these cookies since 1972! They are such a good cookie for Fall! Enjoy!

1 Cup Butter
1 Cup Sugar
1 Cup Pumpkin (canned)
1 Egg
1 tsp. Vanilla
2 Cups Flour
1 tsp. Baking Soda
1 tsp. Baking Powder
1 tsp. Cinnamon
½ tsp. Salt
½ Cup Chopped Nuts (optional, but I like Walnuts)
*Cream butter and sugar. Blend in pumpkin, egg, and vanilla. Add dry ingredients (have dry ingredients mixed in a bowl). Add nuts.
*Drop on greased baking sheet. (I use a spoon, but do not need to form the dough).
Bake at 375 degrees for 10-15 minutes!
Frosting
½ Cup Brown Sugar
¼ Cup Milk
3 Tablespoons Butter
*Heat above ingredients on the stove for 2 minutes.
*Let cool!
*Add 1 tsp. vanilla and 1+ Cups Powdered Sugar to the cooled saucepan.
*The frosting should be a medium thickness.
*Drizzle frosting over cookies!
*Refrigerate for freshness!

I love those haystack cookies although I don't think that I have ever made them. Around here I think that most people make them with marshmallows added too. Adds a little bit of chewy to them. I just got done cooking pumpkin seeds that we harvested from those blasted jack-o-lanters. Oh the slime! We are on week 7 of The Patriarchs here and it is amazing to me the way that God uses ordinary people for all kinds of things. Absolultely Amazing!!! My prayers are going out to the leaders of those bible studies, ours was sick with the flu(it is all over) this week so extra prayers for her and her family.

This is the time of year my nine year old and daughter and I like to make cornflake candy (some call it cornflake cookies). I made two batches last night for my sons preschool party today and there we none left. Here's the recipe:
7-8 cups cornflakes
1 cup light karo syrup
1 cup sugar
1/2 stick butter
1 cup peanut butter
1 tsp. vanilla
Mix sugar, syrup and butter in heavy sauce pan. Cook over medium-high heat. Bring to a boil for one exact minute. Remove from heat and add peanut butter and vanilla. Stir until blended. Add cornflakes gradually. Drop by spoonfuls onto wax paper and let cool.
Our Bible Study group just completed "Believing God". WOW!!! what an awesome study. I have a new look on life and I AM BELIEVING GOD in a entirely new light.

Hey Amanda - thanks for sharing the recipe and the kick-in-the-pants reminder to visit the 'hood - whether we have errant canines forcing us to or not! I just finished making/baking almost 90 owl cookies (oh my gracious -- they are so cute) for my kid's classes. Later this month it will be 90 turkey cookies (the yummy ones with Rice Krispie bodies on Oreo cookies w/ candy corn for feathers); then, next month it'll be me cranking up Bing Crosby while I whittle away an evening making candy cane cookies. What would life be without kids and cookies??
Hey - I have a suggestion (is that okay?!). I was so inspired by reading everyone's favorite worship songs b/c I realized there were some songs, mentioned by so many, that I'd never heard of - can't wait to check them out (and, while we're on the subject - it's not exactly music to work out to - but Marty Goetz is my MOST FAVORITE EVER worship singer. For a number of people I know his music is an "aquired taste" - so, if you come across a CD of his, listen to it like 20 times before passing judgement and then -- I can practically guarantee this -- it will be one your most beloved recordings as well).
Anyway - back to my idea - at some point, would you be up for posting a thread asking Siestas to share the top three books that have impacted them? Or, maybe the most recent impactful book and then one or two of the overall most impacting? I would love to hear what my Siestas have to share on the "kingdom literary" front!

This year, on All Saints Eve, I'm most thankful for George Mueller and Eric Liddel (have been reading their life stories to my kids this fall. Talk about inspiring!),

This recipe seems involved, but is actually pretty easy. And, if you like cranberries, you'll love it!! In fact, I have a bag of cranberries in the refrigerator just waiting to be "sauced". : )
Cranberry Squares
1 1/2 cups quick-cooking oats
1 1/2 cups flour
1 cup light brown sugar
1 tsp baking powder
3/4 cup cold butter, softened
1 cup "brandied" cranberry sauce*
*recipe for sauce at bottom
Preheat oven to 350. Mix oats, flour, sugar and baking powder in large bowl. Cut in butter with pastry blender or 2 knives until mixture is crumbly.
Press 2/3 of the oat mixture firmly onto bottom of 9" square baking dish. Top with "brandied" cranberry sauce. Sprinkle with remaining oat mixture.
Bake 30 minutes or until topping is lightly browned. Cool completely and cut into small squares to serve.
"Brandied" Cranberry sauce
4 cups fresh or frozen cranberries
2 cups sugar
1/3 cup brandy or orange juice (I use OJ)
Preheat oven to 300. Place cranberries in 13x9" baking dish, sprinkle evenly with sugar. Add brandy or juice. Stir until well blended. You should have enough sauce for 2 batches of squares.

One of my favorite fall treats is actually a snack mix that tastes like a salted nut roll. You simply mix salted peanuts and candy corn (equal parts). If you want to get fancy, add M&Ms...delicious!
I would normally love this tasty treat but I am SO FULL on Halloween candy I can't even think straight!!!
I love haystack cookies!! And the no-bakes with chocolate and peanutbutter and oatmeal... oh! and scotcheroos (butterscotch chips melted and mixed with rice krispies then chocolate chips melted over the top)... ahhh. Tis the season for yummy treats and a few extra pounds. LOL.
oh now y'all have done it talking about caramel apples!
There's this wonderful shop (that is thankfully far enough away I don't get there often) called the Rocky Mountain Chocolate Factory that does to-die-for caramel apples. My favorite is the Snickers. Its a granny smith apple dipped in caramel then drizzled with semi-sweet, milk and white chocolate and rolled in chopped peanuts.
I'm going to have to go get one. ASAP. =)

Thanks for the prayers for Tuesday night. Our group (which I host)is half way through the Wising Up study. They blessed my socks off this week. We hadn't really taken any time to introduce ourselves early in the study so I thought it was time. In addition to each person talking about themselves, they shared how I have impacted their lives. Very humbling but what a shot in the arm. Sometimes I don't feel like I do anything for God so it really shocked and uplifted me. I attribute it to your request for prayer Amanda. I think we all need that every once in a while. Thanks again.

1 White Chocolate Bark
Yellow M&M's
1 Bag Pretzel Sticks
Melt the White Chocolate and spoon it on to Wax paper (about a Tablespoon) put a Yellow M&M in the center and the Pretzel Sticks on each side. They are yummy. I do not have a picture but they look just like Bacon and Eggs.

I'm sure your new found neighbors will enjoy them. I have four dogs now and my Poodle Toby Keith got out and bite the girl down the block on the ankle cause they always tease them . I was so upset at Him for doing that but the Lord worked it out and He is up to date on all shots and stuff and I watch Him closer with running out the front door . I'm am praying for My Husband to put up a storm door so I won't have to worry about the mob squad of doggies that are under all under 20lbs doing that again !

Hey Amanda how about a very healthy version of haystacks. My friend, (LDN, RD.) has taught me a great way to make these so everyone can enjoy them. My family loves them so much I can't keep them in our house.
1 package chocolate almond bark
1 cup peanut butter
2 Tblsp. flaxseed meal
2 sleeves Fiber One Cereal.
Melt first 3 ingred. for 2 min. in micro. stir to blend the stir in cereal drop by ice cream scoops on wax paper to harden. Yummy! Carmen

I almost cried on the way to Bible Study Tues night because there are so few Esther sessions left.
The praise and worship was so anointed and more awesome (if that can be said) than usual. I so needed it as my father had major stomach and abdominal surgery Wed.
This a.m. as I sat in my chair at the office in such an exhausted state, wishing I could be at the hospital again today, it was such a joy to read the blog and read the sweet sharing between siestas.
I hope to meet all these wonderful ladies one day as we dance on the streets that are golden and forever praise our Lord.

I make this pumpkin bread recipe every year. It looks better using the fresh cranberries...slices of dark pumkin bread studded with bright pink cranberry circles. But my kids prefer the sweetness of craisins or raisins. I also use the basic recipe to make a kind-of-light banana bread, since it uses oil & water instead of butter.

Pumpkin Cranberry Bread
Makes 2 loaves
Adapted from recipe in Gourmet Magazine
1. Preheat oven to 350 F. Butter two 8½ x 4½-inch loaf pans (9x5 pans would work, too.)
2. In a medium bowl, sift together dry ingredients:
4 cups all-purpose flour
4 teaspoons baking powder, preferably aluminum-free (e.g., Rumford’s)
1 teaspoon salt
½ teaspoon baking soda
½ teaspoon ground cinnamon
½ teaspoon ground ginger
¼ teaspoon ground cloves
3. In a large bowl mix together wet ingredients:
First, whisk together -
4 large eggs
Then add in and whisk -
½ cup water
½ cup vegetable oil
And then add in and whisk until smooth -
2 cups canned solid-pack pumpkin
2 cups white sugar
4. Stir dry ingredients into wet ingredients using a wooden spoon or rubber spatula, just until batter is smooth. Stir in -
2 cups picked over fresh or frozen cranberries [or, a 6-ounce package of Craisins]
5. Pour batter into loaf pans, spreading evenly.
6. Bake in middle of oven for about 1 hour and 10 minutes, or until a toothpick comes out clean, switching the positions of the pans halfway through the baking time. Cool in pan on a rack 10 minutes. Turn bread onto a rack and cool completely.
To make banana bread:
1. Substitute the same amount of mashed banana for the pumpkin.
2. Omit the spices (cinnamon, ginger, cloves).
3. Omit the cranberries.

What a great idea. And how appropriate the haystacks are for this time of year. I'm quite sure your neighbors who met Beckham enjoyed these haystacks a lot more than his visit. HOWEVER, they will probably retell the story about their Sunday afternoon visitor more often.
Reading this entry brought back sweet memories of years long ago when Mom and I would make divinity candy and take to folks around town. We'd make it Christmas colors--red (actually more of a pink color), green and white. What fun and what a blessing to see the delight on faces of those we delivered it to. Sweet memories!!!

Sorry about the delay in getting a recipe posted. This isn't one that I've tried YET but it is one that my cousin posted on our family site. If you're like me, anything with the words, "caramel apple" has to be wonderful. Hope you enjoy the recipe.
Caramel Apple Cider
(like Starbucks)
Ingredients:
1 gallon apple cider
1 large bottle Caramel syrup(found in coffe aisle--Torani is one brand, DaVinci another)
1 bottle Smuckers caramel ice cream topping cinnamon to taste
Directions:
Put all in a crockpot and warm. Top with whipping cream and a pinch of cinnamon if desired.
