The night Jackson and I both wore bibs
In honor of our Louisiana sisters:
One night when I was in Houston a couple of weeks ago, I pulled up in my parents' driveway and beheld a wonderful smell. As I got out of the car the aroma of crawfish boil spices filled the air and cleared my sinuses. The neighbors across the street were having a party in their driveway. It was all I could do not to walk over there and crash the party. But I had just been to a wedding and I was wearing a new black dress and my dressy coat from Arden B. And Mom had gotten my hair just so. It was not the right time. I was dressed more for lobster at Pappa's steak house.
But last night was the night for crawfish at Pappadeaux. I dressed in a black t-shirt and pulled my hair back just so. I was ready - more ready than I'd ever been with a pack of diaper wipes waiting to be of service. Our friends Justin and Jennifer met us there. They are possibly the biggest crawfish lovers this side of Louisiana. I called them as soon as I left Houston and pleaded for them to feed me some mudbugs...and soon. My husband is allergic to shellfish, so I can't go to him for my crawfish needs.
We had a great time fellowshipping over the crawdaddies. I think it is less of a meal and more of an event, which is probably why I like it. They really are kind of nasty, or rude as my dad says, little creatures. But the seasoning makes it so good!

Jackson did not partake of the crawfish, but he did get to hold one briefly.

I raise my crawdad in honor of the Louisiana ladies!

Amanda,
You are so right...crawfish boils are more of an event than a meal. We just partook on Saturday night...and it meant inviting the grown children over and making a night of it in the backyard! Glad you got your fill of mudbugs. Pappadeuxs is the next best thing to home cooked.

I share your love for the little mud bugs. This year for Christmas one of my gifts from my dear hubby was a crawfish (seafood) boiling pot and all the equipment needed to have a great time. The pot is almost big enough to swim in. Think he is hinting about something? Soon dear, real soon!
Yum! 'No cajun food here in CO that I have found, yet. I used to eat at the Pappadeaux in Austin when I was at UT. My husband says that was before I was saved and transferred to A&M when we married! He said I had three strikes against me: a yankee, a Longhorn and a Methodist (he was just kidding my Methodist sistas..I love you so!).

Amanda, one of my blog readers just sent me a link to this blog! I emailed your momma months ago begging to see pictures of your boy and finally, I get to see him. He is adorable! I sent your mom a copy of my "Your Boy" book to pass along to you so I hope you got it. Since you have a dancing boy, you might enjoy seeing my son's latest YouTube video from college--it's posted on my blog page at www.virtuealert.blogspot.com. Who knows--that could be Jackson someday! Tell your mom I said hi and to please, please start looking like a grandma!
i'm drooling!!! I could eat crayfish every day!

Awe, thanks for sharing those pictures with us. I was in Bossier City and I was suprised when Beth didn't show any recent pictures of Jackson. I'm from MS but we love crawfish here too.
Amanda:
If you want some good crawfish-you should go to Beaumont and eat at Sartains! It is there on I-10 -I used to live there and they can cook some crawfish! Of course -there is much changing of the taste in meat-just how spicy they are! Jackson is absolutely beautiful by the way! I have a little girl that is 13 months old--she needs a good Christian boyfriend -lol!
Shannon, Bethie was very sad not to have any pics with her in Bossier City. The ones they had got lost somehow and I wasn't able to send her replacements in time.
I know the Lord gave us dominion over animals but sea creatures are not one that I will partake in. Here is a blonde question from one dark haired girl but... They aren't alive are they? You are one brave girl!
I'll sit by the highchair with Jackson and not partake! He is braver than I because I wouldn't even hold it. he he :)

OK....for us california girls those things look, well...do you really eat them? I was in New Orleans once. I was at a restaurant where a bunch of people were sucking and eating those things. I had never seen anything like that before. They were so happy. I asked if I could just sit at their table and watch them. It was an event I won't soon forget...Amanda, my husband is allergic to shellfish as well. I have to find others who will help me quench my desire for fresh lobster!
Alright, another confession from a Yankee: never had crawfish - htye just *look* scary to me! But what I think is just precious is that picture of Jackson toasting his LA sistas - to hold that crawfish like that. No fear in our little boys, that's for sure!!! (I know it was dead but still!!!) So glad LA was just wonderful. Can't wait to hear more from Mama Beth!
love you!
Amanda, I was at the conference this weekend and have already blogged my feelings over how great it was. I have a new grandbaby who was in town for the weekend so I got to love to love on him and my own baby turned eleven on Sunday. It was a great weekend already but when I go home from the conference on Sat. my dad had bought 50 lbs. of crawfish for us! YUM YUM . I am a very girly girl, however I am a mess when it comes to my crawfish. My own children won't eat them in public with me!!!! Oh life was great this weekend and I am glad to know you all are crawfish lovers too. Jackson is a doll.

My hat is off to you sistas!after watching a mud bug farmer on dirty jobs on the discovery channel, I will never eat mud bugs again! I can't believ Vickie Courtny is a blogger! How neat is that! Sistas if you don't know who she is.... well get to know her stuff. I started following her and Beth from Barbara O'chesters " Great Hills Retreats" You will fall in love with her teachings. Amanda How did the mission trip go that Curt went on? We want to hear. Dedra @ DFW
haha i love it...people don't just go to those conferences to see mama beth...they demand those baby blues!! :) oh jackson, you have no idea the power you possess :D
The pictures were great. Amanda, thank you sharing with us. I was surprised to see Jackson holding the crawfish. He must be adventurous and curious. Did you see those "baby blue eyes" locked on to that strange looking crawfish? Your little guy is adorable.
I don't get the crawfish, and lordy, I didn't know they were that huge! My college room mate was from Louisiana and she talked of crawfish boils, nobody in the north could believe that you would have crawfish partys let alone eat them. And there's a special boiling pot. If I lived in the south I think I would have to fake the shellfish allergy!
Is there anything that the southern people don't understand what us yankees do?
Katy
Precious! Precious! Precious! Thanks for sharing :)

HA! Jackson's got a little cajun in him! We ate at a place called the Crawfish Hole on the way home from the Bossier conference! Magnificent stinkiness!!!
And sistas, crawfish are like people...you can't always judge them by their crusty exterior! There's juicy goodness lurking beneath the surface!!!
They're definitely boiled and not eaten alive. You just get the tail out of the shell and eat it. It's ridiculously messy and fun!
That's so funny--we went to Pappadeaux last week for our crawfish fix! Well, not mine--I won't touch the things--but my hubby has to have them when they're in season. It's become a tradition! My 17-month-old daughter was mesmerized by them.
Let me just share - you never know how much you miss seafood until you can't get it! I am a Louisiana girl, but I now live in Texas. There is seafood around, but you have to look hard to find it like it is at home. My husband (Who is a pastor) and I are having a big crawfish boil for some of our church family in just a couple of weeks. He's meeting his mom half way to pick up the mud bugs! Yummy! I have hosted many events in my home, but never have I hosted one that I had to put on the invitation: "Don't wear anything nice. You will get messy!" Oh sweet bliss! Crawfish in Texas with my church family! How could I ask for more?
Ya all look real cute. We don't have crawfish in Seattle but we have salmon and lotza Tully's coffee!!! Next time Amanda come up North to Seattle with your mama and daddy and we'll treat you and Jackson to a night out on the town!!!
Being from LA I love crawfish. I know they look funny. Like Amanda said, you pull the tail away from the body and then peel the shell off the tail. It has a similar texture to shrimp. They are just boiled in a combination of spices that makes them soooo good. I haven't had any this season, but it won't be long. Jackson is so cute!
I'm sorry girls... Those things look nasty... I can't eat something that can look back at me!
You all look great! We are not the crawfish sort up in the Great Northwest, but it does look like fun! We have one restaurant up here that puts all the crabs, etc. on the table and you put bibs on and eat it with your fingers! Messy! I think it's great you are offering all types of food to Jackson. Otherwise, he might be a picky eater. They are very hard to please then- Good job being a Mommy Amanda!
P.S. I forgot to ask...does anyone have a recipe for crawfish? I can't see how it could possibly be as good as Chicken and Dumplin's! (smile)
Awwwwwwwww, Amanda Jackson is adorable. Craved crawfish my whole entire pregnancy with my first. Big Macks for my daugter , My third Son I don't remember but my last one was red beans and rice.
I love large boiled and salty shrimp. I spent Christmas of 2005 in Texas with my Aunt they live in Giddens. Had to watch out for the deers that dart out in the road and I got to meet a 1500 pound bull who let my Mom pet Him on the head I wasn't gonna get that close. It is a great place to visit and buy some land for Hurricane season.
I pray to God that South East Lousiana escapes them this year. Thank y ou Lord for Last season. We faired out pretty good except for some trees down my parents lost their Home.
Waiting for after good Friday than the prices of seafood will go down out here. They want an arm and leg out here (lol) .
I also watched the Bossier City video AWESOME! Jesus is truly Lord!
Have a Blest Nite My Sisters

I must say this post has me craving some crawfish! And someone even mentioned one of my favorite crawfish places--Crawfish Hole. I have made my mind up--I'm having some tomorrow. Just one of the fun things about living in Louisiana. But, I must say that I didn't have the nerve to try my first crawfish until I was 17, so I can relate to the sistas who can't quite figure out this crawfish thang. :)
