Siestas! Howdy from Houston! I just flew in from Atlanta and am so excited to spend most of this week working in the LPM offices. I have the joy of seeing my sweet co-workers face to face for a few days!
Now let's get to the recipes. This week’s common dish is for Chicken Enchiladas. We’re hoping many of our Bible study participants will make it for their Tuesday gatherings but the beauty of posting recipes is that they can be used by all of us. Keep in mind this is strictly optional. Just a fun idea for those who want to give it a try. This is my favorite Chicken Enchilada recipe by Rebecca Rather. It is wonderful for a gathering because it can be assembled, covered, and then refrigerated up to two days before it is baked. It has the convenience of a casserole type dish without being so predictable. And, of course, enchiladas should never be eaten without chips & cheese dip and salsa. P.S. I always add taco meat and chopped onion to the cheese dip, but hey, that is just me and I can't stop adding to a recipe to save my life. Obsessed much. This cheese dip is AWESOME because it is soup-based which means it doesn’t quickly turn into a solid mass like most cheese dips. Props to Molly Fowler for the science behind this recipe.
“Killer” Chile Con Queso by Molly Fowler “The Dining Diva” in Menus for Entertaining
Serves 10-12
1 (10 ¾ oz) can Cream of Chicken Soup, undiluted
¾ cup Evaporated Milk
1 (7 oz) can Diced Green Chiles
2 Tbsp Minced Jalapenos (optional)
1 (4 oz) Jar Chopped Pimiento, drained
1 tsp Ground Cumin
1 (1-oz) Pkg Ranch dip Mix
1 Can Rotel Tomatoes and Peppers
1 lb Velveeta, cut into cubes
¼ Cup Minced fresh cilantro
Minced fresh cilantro for garnish
Tortilla Chips for dipping
Directions:
Combine soup, evaporated milk, green chilies, jalapenos, pimiento, cumin, dip mix, and Rotel in a medium saucepan. Cook over low heat, stirring frequently. When bubbly, add cheese and cilantro, and stir until cheese melts and mixture is combined. Be sure to keep the heat low, and stir constantly after adding the cheese to prevent scorching. Serve warm with tortilla, reheating as needed.
Make-Ahead Tip:
This queso can be made ahead or even frozen and reheated before your event. I prefer to reheat it in the microwave.
Salsa Fresca
Recipe from New York Times, July 26, 2006
2 large fresh ripe tomatoes, chopped
1/2 large white onion, peeled and minced
1/4 teaspoon minced raw garlic, or to taste
1 habanero or jalapeno pepper, stemmed, seeded and minced, or to taste
1/4 cup chopped cilantro leaves
1 tablespoon fresh lime juice or 1 teaspoon red-wine vinegar
Salt and freshly ground pepper.
Combine all ingredients, taste and adjust seasoning as necessary. Let the flavors marry for 15 minutes or so before serving, but serve within a couple of hours.
Time: 10 minutes
Yield: about 2 cups.
Sour Cream and Chicken Enchiladas
Recipe by Rebecca Rather
Ingredients:
1 store-bought roasted chicken (3 to 4 pounds)
4 tablespoons (1/2 stick) unsalted butter
1 large yellow onion, chopped
8 ounces button or cremini mushrooms, sliced (optional)
2 cloves garlic, minced
4 cups (32 ounces) sour cream
½ cup heavy whipping cream
1 (7 ounce) can diced green chiles, undrained
1 (10 ounce) can tomatoes with green chiles
¼ teaspoon kosher salt
¼ teaspoon freshly ground pepper
1 cup fresh or frozen corn kernels (about 3 ears), or one 8 oz. can corn kernels
1 cup canola oil
12 corn tortillas
2 ½ cups (10 oz) shredded Monterey Jack cheese
Directions:
Preheat the oven to 350F. Grease a 9X13 inch baking pan with butter or cooking spray.
Remove and discard the skin from the cooked chicken. Pull the meat from the bones, shred it into bite-sized pieces, and set it aside in a large bowl.
In a large skillet, melt the butter over medium heat. Add the onion, mushrooms, and garlic and sauté until the onion is translucent, about 4 minutes. Stir in the sour cream, heavy cream, green chiles, tomatoes, salt, and pepper until smooth. Cook until warmed through, being careful not to let the mixture boil. Reserve 2 cups of the sour cream mixture for pouring over the casserole. Stir the corn and chicken into the remaining sour cream mixture, which will be used to fill the tortillas.
In a large skillet, heat the canola oil over medium-high heat. Using metal tongs, dip each tortilla in the hot oil for a few seconds on each side, until softened. Stack the tortillas on a paper towel. Spoon a generous line of the chicken mixture down the center of each tortilla, roll it up, and place it, seam side down, in the prepared pan. Pour the reserved sour cream mixture evenly over the tortillas and sprinkle with the shredded cheese. Bake uncovered, for 20 to 25 minutes, until the sauce bubbles and the cheese is melted. Serve immediately.
Siestas! I have found that this recipe makes way more than 12 enchiladas (usually makes at least 16). Maybe it is just me, but the cream sauce is very rich and so I make it stretch a little further. You could adapt this recipe easily by simply using reduced fat sour cream or less heavy whipping cream. I wouldn’t, but then again, I am a “Moore” at heart.

I am so incredibly happy our first meal includes Mexican food! Though the enchilada recipe may be unexpected, the fact you chose a meal from South of the Border is wonderfully predictable.
FYI - I told the girls at the Siesta Blog that Ole' means (according to my beloved Dictionary.com), "excited approval". Sounds like a Siesta Amen to me!

Oh and y'all, one of the girls joining my group here in Colorado has an almost 3 year old with leukemia. He was hospitalized on Friday. Please pray for Ezra (and his family: Melodee, John and Ethan).
She was so thrilled to be able to do a Bible study and cannot get away during the day. Not only that, but she can walk to my house. Beth, this is an answer to prayer--for a sweet, tired Mama. I cannot wait to see what God does!
This sounds great and I love Mexican food, but I think I'm going to have to stick to something more brunch-oriented since we're meeting at 10:30am this time.
Definitely keeping this recipe for another time though.

Melissa, I have sons your and Amanda's age- so I have not had the privilege of daughters to share recipes and other girly topics of interest. I gave up cooking a long time ago when my late working husband did not show up for "home cooked meals". I'm having fun observing and now now being inspired to "get in the kitchen"-a dear acquaintance just died and unexpected loss seems to bring out a "nesting" instinct- thank you dear one for inspiring us in the kitchen as well as in our hearts, spirits and souls-My friend's daughters said they "won the jack pot" at the funeral for having had the mother who was theirs. I know you, Amanda and your mother all feel the same way about each other. Thanks for sharing with us. Blessings and lots of love as we begin our study. I'm thinking about the power as our study group prays for each other over the next several weeks. Over a thousand prayers held up to our Lord each day, WOW! Sorry this has gone on and on... Those enchiladas got me on a roll!

I have to say...I went by Lifeway to get and special order more books for this study. I was looking over the ones I was able to pick up and will get the rest on Wednesday...I am so excited about this study and about what GOD is going to do in my heart through it. I am thrilled to again be "leading" a group of women to dig into the WORD. Am honored that the LORD JESUS allows me to serve HIM by inviting others to open HIS WORD and dig in. Can't wait to begin walking along side of the group that will be meeting with me and also with each of you SIESTAS.
I must say that Melissa's recipes look a little daunting to me, but I'll try it...I'll have to cook it twice though...my husband would feel left out if I made it for the ladies and didn't share it with him.

Just a quick note on the salsa. I do the same recipe and the big fat cans of peeled whole tomatoes work great, since I know everyone is short on maters!

I love the recipe!! I love ANYTHING Mexican, but I'm just going to stick with dessert and coffee and/or tea. I'm going to make the Butterfinger Cake from the study. Unless the women comment otherwise that is probably all that I will do for our sessions. I'll be open to anything the group is interested in. Especially if someone else wants to do the cooking! :) I more of a baker--not a cooker. :) I can hardly wait to get started!

How much do I love that the recipe for chicken enchiladas calls for a whole roasted chicken and doesn't suggest to boil a raw chicken?

Oh, boy. I have no idea if I can do this, but I'm going to try if my husband will let me. May not be able to afford it. We ended up spending more than expected the last couple of weeks. If nothing else I'll keep the recipes and try it some other time.

Way to go Melissa!! Mexican food. It made this Texas girl's heart beat a little faster when I saw the recipes. I am also doing the Sopapilla Cheesecake for dessert.
I have to also share that I went to a little shop (Marble Falls, Texas) that make their own candles to pick up votives for our meetings. Their scents were so different and so Texas, I had to go in a little different direction than the book called for. (Texas Bluebonnet, Eastern Fig, Leather!! - be still my heart, think saddle shop - it's wonderful) The candle scent I have chosen for this week is...Pecan Praline. Oh, I am so excited to have a theme!!
We are a whole cookin' family so this is great fun! One extra note if I may - we have a wonderful chicken enchilada recipe that softens the tortillas in chicken stock instead of oil and is very yummy. also saves a little on the calorie count and healthy vote!

I echo the other siestas...Yum and Ole'! We're getting together at my house tomorrow with our calendars! We're having a few scheduling challenges (youth camps, family trips, etc.) but we are determined... and we NEED it - the study and the fellowship! Hi! These recipes are going in my recipe box! They look so yummy. However, I think we are going to stick to just a snack...we are all stay at home moms on a majorly tight budget! Can't wait to try these though one night for dinner!
For those on a tighter budget or schedule you could try this recipe for chicken enchiladas - it is my Momma's recipe and a family favorite...
1 (large) can Cream of Chicken Soup
1-2 cornish hen(s) roasted (if you are pressed for time, pick up a cooked one at the store for around $5).
2 16 oz pkg. Cheddar Cheese shredded
1 small can of Mild Rotel Tomatoes or sliced jalapenos (optional)
2 dozen corn tortillas
1 small can of chicken broth
Directions:
Preheat oven to 350 degrees.
Debone and shred fully cooked chicken. Mix with cream of chicken soup, and jalapeno peppers/Rotel (if you like it spicy).
Place chicken broth in a small skillet (approx. 1/4 in. or so deep) and bring to boil, reduce heat and soak corn tortillas individually in the broth until soft, then layer in the bottom of a greased 9x13 in. baking pan to make a "crust."
Then layer in the chicken and soup mixture before covering generously with cheddar cheese.
Repeat process for soaking and another layer of corn tortillas on top. Cover the top of the casserole with more Cheddar Cheese and bake at 350 degrees for around 20-30 minutes. The enchiladas are done when the cheese is fully melted and the tortillas begin to crisp at the edges.
I love these recipes and keep them coming.

Sour Cream Chicken Enchilada's
These are delicious, simple and very cost effective.
3-4 chicken breasts, skin off, stewed with some chopped onion, chicken bullion, salt & pepper for about 25 minutes. Cool, and dice up.
Place in a mixing bowl with:
2 cans of cream of chicken soup
1 small carton of light sour cream
1 small can of diced green chiles
Stir well, and place about 1/4 cup in a flour tortilla, roll up and place in a baking dish sprayed lightly with Pam. Continue until you have about 1 cup of the mixture left. Place this then on top of all of the enchildas. Cover with shredded sharp cheddar cheese and bake at 350 degrees for about 25 minutes. You will enjoy!
Melissa, I fixed all three dishes for the VBS workers during VBS (about 25 people) The dip and the chicken enchiladas were a huge success. My husband wants me to fix them for his football team next week when they stay in the church overnight before a football camp! Fifty young men!! I had fixed early while he was gone and I went to pick up my other son from basketball and came back and he had eaten the whole batch. (I told him that it took everything God gave me to submit to the Holy Spirits' forgiveness and grace not to kill him--I had to re go to the store and fix it again for the workers that night. Gotta love him! He did help me make the second batch!!!
hello, im new to this but wanted to leave a comment on the wonderful recipes melissa has left and also tell you all if you dont already know about it a wonderful web site with great recipes called the piorneer woman cooks,it is great!! she does the step by step pictures like you did!! also i wanted to give you all a great pasta recipe that i think anyone would love..ingrediets 1 pkg creamed spinach (must be cream) 1 pkg cream cheese softened, 5 cupe penne pasta ,1 and 1half pounds ground beef, 1jar homestyle salsa, ,1 14 oz can tomatoe sause, 1 tbs chili powder,1 cup monterey jack cheese...mix cream spinach and cream cheese, set aside: cook hamburger and drain and in mixing bowl mix hamburger with every ingredient except the cream cheese/spinach mixture and the monterey jack...put half in lasanga size pan and top with all cream spinach mixture and pour rest of hamburger mixture on top bake 30 min. at 375 add montery cheese on top cook 5 more min. thanks hope i did this right..love your blog by the way!!
hey i wrote the recipe for the past dish..just a few notes that i know are obvious but you never know ...the penne pasta of course has to be cooked and drained before you mix it with the hamburger and other ingredients and also the web site i noticed i spelled it wrong i made alot of typos actually but anyway its the pioneer woman cooks...great web site..thanks so much for all the great tips but most of all for drawing our attention to our great and glorious God!! praise Him!!! oh and one more thing i think it would be interesting to hear peoples aging and beauty tips ...especially from your mom she looks younger and more beautiful every day! must be the glory and joy of the Lord!!
I use Rebecca Rather's recipes for EVERYTHING. She is the best! This is my first post, even though I've been reading the blog for awhile. I tried Melissa's chicken/potato dish, and it was excellent. Thanks for the encouragement - I read the blog on my lunch break.
