...And yet another Common Meal!!!!

This week’s common Meal!

Greetings my LADIES! I hope that each of you have had a wonderful and blessed weekend! I just arrived back to Atlanta after a fantastic week with my family and Living Proof co-workers in Houston. We had such a blast. Apparently I lost my mind and volunteered to cook lunch for everyone at the Ministry on Friday. I had no idea how much time and energy it would take to cook for twelve people and realized I had been overly-ambitious when I was still up at 1:00 a.m. on Friday morning. Well, I persevered and we ended up having one of the funniest and most enjoyable lunches I have ever had at Living Proof. This really had very little to do with the quality of the food but everything to do with the magic that happens when a bunch of women gather around a table crowded with food. Funny women are absolutely my favorite people in the world. One of my co-workers, Susan Kirby, is seriously one of the most interesting and hilarious people I know. She is over thirty-years older than I am and I honestly would rather have a conversation with her than most women my age. I hope this week’s recipes spark as much fun and honest conversation as ours did at Living Proof this past week.

This week’s main dish is going to be taken from the “No Other Gods” workbook on pages 160-161 (read all of pages 160 & 161). The recipe looks awesome by the way and I am also planning on making it for my really good-looking husband sometime soon. Kelly Minter calls the recipe “Cathy Lorenzo’s Authentic Italian, Ridiculous, Over-the-Top-Will-Make-You-Cry Chicken Cutlets” (see page 160) along with “Mom’s Sauce” on page 161. Can’t wait to see how it comes out! My guess is this authentic Italian sauce will leave your house smelling divine!

I am including two desserts for you to choose from. Obviously the cake is more intense than the take-it-and-go bars but both recipes are very good.

Peanut-Butterscotch Crunch Bars (makes 16 bars)

These no-bake-bars are wonderful! They are glorified Rice-Krispy treat sort-of bars, if you know what I mean. I got this recipe from a ridiculously good cook-book called “The Summertime Anytime Cookbook” by Dana Slatkin. I sent these with Colin to work and they delivered a serious blessing.

1/2 cup sugar
1 cup light corn syrup
1 cup smooth, salted peanut butter
6 cups Special K cereal
1 cup milk chocolate or semisweet chocolate chips
1 cup butterscotch chips

1. Lightly grease a 9x12 inch baking dish.

2. In a large saucepan over low heat, dissolve the sugar into the corn syrup, being careful not to let the mixture boil.

3. Dissolve the peanut butter into the sugar mixture, turn off the flame, add the crushed cereal, and mix well.

4. Spread the cereal mixture evenly into the prepared baking dish.

5. Over a double boiler or in a microwave, melt the chocolate and butterscotch chips together. Spread the topping over the cereal mixture and let it stand at room temperature until firm, about 1 hour. Cut into 2x3 inch bars.

Melissa’s Notes: Cut the bars with a very hot knife and then store them in an airtight container and they will keep beautifully for up to 1 week.

Swiss Chocolate Cake

This recipe is very important to me because a woman very dear to me made this and it was the first and the last chocolate cake that I have ever liked. This is a chocolate cake recipe designed even for white- cake-only-lovers.

For the Cake:
1 Swiss Chocolate Cake Mix (if you cannot find Swiss Chocolate use any choc. Cake mix)
1 small box instant vanilla pudding mix
3 eggs
1 ½ Cup Milk
1 cup Vegetable Oil

Mix chocolate cake mix with pudding and eggs; add milk and oil. Bake in 3 round cake pans at 350 degrees for 25 – 30 minutes. Cool layers thoroughly before icing. (I take a bread knife and split the layers to make 6 thin layers but you can do a 3-layer cake if you would rather)

For the Swiss Chocolate Icing:
8 oz. Cream cheese, softened
1 cup Powdered Sugar
12 0z. Carton cool whip topping, thawed
½ cup Finely Chopped pecans
2 Regular sized Hershey bars, grated

Cream sugar and cream cheese together until smooth. Add Cool Whip, pecans and Hershey bars. Spread icing between each layer and on top only. Chill until you are ready to serve.

Melissa Notes: I like to ice the cake really thin so that I can ice the whole cake but if you don’t have enough icing to do ice the entire cake then just ice the top and let the brown layers show through. I think it is prettier to ice the whole cake, but either way, your taste-buds will be pleased with you.

P.S. Since I REALLY love you, I cannot help but to include those of you who are meeting for brunch. So, here is a fun brunch recipe!

My Favorite Hash Brown Quiche (adapted quite a bit from “Stop and Smell the Rosemary” cookbook)
Serves 6 to 8

24 ounces frozen uncooked shredded hash browns, thawed
5 1/3 tablespoons unsalted butter, melted
2 large eggs, beaten
½ cup half and half
½ teaspoon seasoned salt
4 ounces PepperJack cheese, shredded (1 cup)
4 ounces Gruyere cheese, shredded (1 cup)
1 Large Shallot, finely diced
1 cup diced ham
Fresh or dried parsley for garnish

Preheat oven to 425 degrees. Press hash browns into quiche pan. Blot with paper towel to remove all moisture. Brush with melted butter. Bake 25 minutes. Remove from oven. Reduce oven to 350 degrees. Combine eggs, half and half, and salt. Mix the cheeses, ham, and the diced shallot and place mixture in hash brown shell. Pour egg mixture over top. Bake 40 to 50 minutes. Garnish with parsley.

P.P.S. I am attempting to find an awesome Chicken Salad recipe. I LOVE Chicken Salad and I am always making new recipes to find the best one. So, if you have an outstanding recipe for Chicken Salad, don’t be shy and selfish with it, post it on your reply!!!

Much LOVE,
Melissa

Oh and I wanted to add the most recent picture of The Fitzpatricks. Five great months of marriage and counting....

Hi Melissa,

I've never written on the blog before but read all the time. I live in Mozambique with my husband, 2 sons and 8 young African men, our interns. I cook for all 12 of us every Sunday and it is SO much work but SO much fun to share the meal together each Sunday.

My friend who worked in the catering business taught me to grill the chicken for chicken salad first, add the mayo, salt and coarse ground pepper and put in chopped, raw broccoli stems and either grapes, apples or raisins. I throw in toasted, slivered almonds as well. The almonds and broccoli stems give it a nice texture and I literally can't stop eating it once I start!

God Bless!

While I enjoy the chicken salad sandwich recipes that include grape slices & nuts, this is by far my favorite chicken salad recipe...Feta Chicken Salad!!

http://allrecipes.com/Recipe/Feta-Chicken-Salad

I prefer this recipe with shredded roasted chicken, so I'll often grab an already-roasted whole chicken at the store & shred the meat. Other than that, I follow the recipe & it turns out yummy! Serve in a croissant, a pita or stuffed in a tomato. Enjoy!! =)

I make a very fruity chicken salad with dried cherries, granny smith apples, and walnuts. The key is raspberry vinegar - it can be hard to find, but a couple of splashes makes all the difference. And go light on the mayo - just enough to hold everything together.

These recipe's almost make me wish we were doing the full meals. We are just doing desserts and we leave it up to the person who makes the dessert to decide what to make. You always make the recipes sound like, I'm missing an integral part of life if I don't make it. Then I read the recipe and I think..."She could be right!"

Too hot to turn on the oven.

Women sharing a meal. Can you just imagine San Antonio???

Melissa,

You have always been beautiful, but I truly believe that marriage agrees with you! You look radiant!!

I love chicken salad! When I make it quickly, I use a rotisserie chicken from Costco and it cuts down on a ton of work! If I make the kind that involves a huge labor of love, I ALWAYS season my water that I boil the chicken in. I use lots of salt and pepper, celery, onion and here is the real secret, one fresh garlic clove. I peel the garlic and then smash it a bit before putting it into the water.
Next time you are in town, you should ask me to lunch with you gals and let me bring the chicken salad and croissants!! It would be my joy and pleasure!

God bless you and your hubby!

Hi Melissa -

Here is my favorite chicken salad recipe. It goes along the same lines as my favorite cook Ina Garten. Take 4 bone-in chicken breasts (about 3 pounds) with the skin on, place on a baking sheet and rub with olive oil, sprinkle with salt, pepper and onion powder. Bake for 35-40 minutes in 350 degree oven, or until chicken is cooked all the way through. When chicken is cool, remove meat and throw away the bone and skin. Cut chicken into bite size pieces.

Take 1 cup walnut halves and 1 cup pecan halves and toast in oven for 7 to 8 minutes, just to release their natural oils and goodness.

Mix together about 1 cup mayo (Dale's if you can get it, if not Hellman's) and 1 cup sour cream, along with salt, pepper, onion powder and about 1 tablespoon tarragon leaves (chopped).

Place the chicken, pecans, walnuts and 1 cup green grapes (cut in half), in a bowl. Pour the dressing over the chicken and toss together well. You can either eat on bread (really good whole wheat or sourdough) or just serve on a bed of lettuce leaves or stuff it in a marvelous home grown tomato. If you serve it without the bread, garnish with a few more tarragon leaves on top. Delicious.

You look beautiful, much happiness to you and Colin.

Love and Blessings, Debbie in Tennessee

The recipes look wonderful, but alas, cooking is not one of my spiritual gifts. Apparently not one of my husband's either. We bought one of those new-fangled, state-of-the-art, infra-red gas grills last week, and Saturday night he melted 3 strips of vinyl siding on the back of our house. Somebody stop him!
Love to you all...

Melissa:

Thank you for sharing all of these recipes. They are so-o-o delicious! Our Bible study group as enjoyed them very much. I appreciate that they have been easy since I am cooking for 23!
I do the main dish and another lady does the dessert.

Here is a chicken salad recipe that I love. I have yet to taste one I like better. I got it from a tea room in Texas:)

MERRY HEART CHICKEN SALAD

6 chicken breast halves, cooked and diced
1 cup celery, diced
1 cup green onions, diced
1/2 cup roasted almond silvers
1 cup seedless grapes (I slice them in half)
1, 8oz. container low fat lemon yogurt
1/4 cup Miracle Whip salad dressing
Mrs. Dash Original
Salt
Pepper

Combine all ingredients, toss and season to taste. Add more yogurt if it is not moist enough.(I make sure I have an extra container of yogurt on hand just in case it is needed before serving.) Serve chilled.
Makes approximately 6 cups chicken salad.

*I boil the chicken just until done in a pot with cut onions, potatoes and celery for flavoring.
Also, the lemon yogurt sparks the flavor of this recipe.

These are great served on croissants. I serve them with fresh fruit.

I hope you will try this and see how you like it.

Your pic is beautiful. Thanks again for sharing with the Siestas.

What you DIDN'T tell them (thank goodness because I couldn't have respected you) was that your lunch spread at LPM was a MASTERPIECE. The most incredible "Pasta Cake" with three kinds of cheeses, fresh spinach, and, yes, you were right to add the chopped onion. And, no, I wouldn't have done it. I never change a recipe. If it works the first time, I'm still fixing it like that 20 years later. Blast. And those cucumber sandwiches! I keep thinking about them! How many of those things did I eat? And how about you putting little skinny white bread on one side and little skinny wheat bread on the other then cutting the dang things into perfect circles with cookie cutters??? Who taught you that?? The chicken salad was fabulous and even though I wrecked the crust (the one thing you asked me to do), the strawberry pie was the perfect ending. I keep thinking about how your sister laughed at that lunch. Just starting to feel a little better and all that comfort food tasted so good to her. She was almost delirious. You did not inherit your mother's cooking skills but you did inherit your mother's love of fellowship and raucous laughter with a circle of women who dig Jesus. Life doesn't get much better than that. I love you and your sister so much. So honored to do life with the two of you.

For the sake of the Gospel.

Three fold cord, did you really just ask a Moore woman if she colored her hair? Ask not whether a Moore colors her hair but what color a Moore colors her hair.

PS. But the interesting part about Melissa is that, when she does color her hair, she often colors it her own gorgeous color. She just adds some shine to it. It is as pretty in person as it is in a picture. God blessed the child with some hair.

I can't say that I have some special Chicken Salad recipe but it is ALWAYS a HUGE hit and I have friends who request it....often!

I boil boneless skinless chicken breasts and then add (accordingly...depending on size of batch you're making) purple grapes (halved or quartered), Granny Smith apples (chopped), boiled egg, sweet pickle relish, Hellmans mayo (and, yes, only Hellmans...trust me) and chopped Pecans. One trick that I've learned is that once your chicken is done, just turn off the water and leave it in the broth until you're ready for it. It keeps the chicken so moist.

Yum...I think I need to make some this week.

Melissa,

Your lunch sounded awesome! I look forward to making these desserts for Tuesday evening Bible study. I'm so thankful you all are doing this to include all of us. It makes it a lot of fun and really special.

Here's a recipe for chicken salad. (I like to use a rotisserie chicken and I sometimes substitute pecans for the walnuts.) It's pretty simple but really good.

Waldorf Chicken Salad on Raisin Bread

2 c. chopped cooked chicken
1/2 c. chopped apple
1/4 c. chopped celery
1/4 c. chopped walnuts
1/3 c. mayonnaise or salad dressing
1/8 tsp. salt
8 slices raisin bread
4 leaves leaf lettuce

In medium bowl, combine all ingredients except bread and lettuce; mix well.

Spread about 1/2 cup chicken mixture on each of 4 bread slices. Top each with lettuce leaf. Cover with remaining bread slices. Enjoy

Am happy to hear everything is going well for you and Colin!

Hi Melissa,
Thanks for sharing the picture. Marriage agrees with both of you.

I just want you to know that I'm part of the fruit that lasts borne of the ministry your mom has so faithfully led. I've cut my spiritual teeth on her Bible studies in addition to sound Biblical preaching and teaching from the pulpit. My husband and I have been blessed to raise our children under the ministry of a godly pastor in a wonderful church.

Having said that, I need to tell you that I think you have a rare gift for communicating with women of all ages, but you seem to have a special connection with my generation in particular. I wasn't quite sure how to articulate that until I read your comment about your conversation with Susan Kirby. I'm in my late forties with a husband of twenty-five years, two grown sons and a daughter-in-love. By the way, I absolutely love her and she has brought much joy to our family. My youngest son has recently become engaged and I also love his fiancee`. After having been the only girl in the house for so many years, I'm thrilled to finally have girls around.

Having been a prayer partner with LPM for many years, I'm also thrilled about everything God is doing in and through the ministry. As you ladies serve our Savior by serving countless women He sends your way, it is my joy to serve you by praying without ceasing. Indeed, I thank my God upon every remembrance of you, always in every prayer of mine making requests for you all with joy for your fellowship in the gospel. (Philippians 1:3-5) Now, I'd like to close with a greeting Paul often used. I just love this...Grace to you and peace from God our Father and the Lord Jesus Christ.

Much love and God's richest blessings to all of you.

Here is my highly simple, yet truly yummy chicken salad recipe. I just made it for a tea party recently.
p.s. this is one of those non-measured, eyeballed recipes.

Amy's As You Like It Chicken Salad 4- 6 chicken breasts, boiled/chopped
Paul Prudhomme's Poultry Magic Seasoning
Grapes, halved (Red or Green)
Walnuts, chopped
Mayo (like Blue Plate or Duke's)
Salt, Pepper to taste

Boil the chicken in the Poultry Magic seasoning. Don't overboil. After the chicken cools, chop it up and place in a large mixing bowl, don't worry about it being exact or pretty, just chop or shred. Then halve as many grapes as you'd like in the recipe. Next add the chopped walnuts, as many as you like. Then add mayo, again, to your liking and sprinkle with salt & pepper, uh huh, you guessed it...as you like it. Toss it and chill. I LOVE to stuff croissants with this. Yummalicious! Enjoy siestas!

Had to reply to the chicken salad APB. I love this recipe. Wish I could be more specific, but you'll get the gist.

Cooked, diced chicken (sometimes I boil, sometimes used grilled chicken leftovers. Only white meat please).

Hellmans real mayo (Canola variety)
Dried Tarragon ***this is the secret***
freshly ground pepper
craisins (original)
green onions chopped
sometimes I throw in grated Parmesan cheese

I have no idea what measurements to use. Just eyeball it and you'll be fine!

Bon Appetit!

This is a great chicken salad recipe! It's Fairfield Grocery's Chicken salad...(a little market in Shreveport, LA.)

-5 pounds boneless skinless chicken breasts
-1 cup chopped celery
-1/2 cup water chestnuts, chopped
-6 tablespoons chopped purple onion
-1/4 cup chopped red bell pepper
-1/4 cup chopped yellow bell pepper
-1 quart (about) mayonnaise
-Salt and White Pepper to taste
-Cayenne pepper to taste

Combine the chicken with enough water to cover in a stockpot and bring to a boil. Boil until tender and drain. Cool slightly and shred by hand, discarding any fat.

Combine the shredded chicken, celery, water chestnuts, onion and bell peppers in a bowl and mix well. Add Mayo until very moist and mix well. Season to taste with salt, white pepper and cayenne pepper. Store in refrigerator until serving time.

It always gets great reviews! Enjoy!

Boil chicken in chicken broth. Chop. Mix chicken, celery, carrots, and tortellini in big bowl. Salt and pepper to taste. Mix dressing in small bowl, add to chicken mixture and chill in fridge for 1 day. Serve on bread or crackers. Yummy with sugared grapes and blueberry muffins for brunch:)

This recipe came from a sweet friend in my small group. It is simply the most delicious chicken salad I have ever had. Hope you love it too!

Those desert recipes look so good. I might have to try them. I am trying to lose weight, but you got ta have some yummy stuff once in awhile. :) I am not doing the common meal and bible study because I am leading Stepping up with two different groups in one day. Anyway, I always love reading the recipes and trying them out on ladies in either group. So far they have raved about everything I have tried from the blog.

The picture of you and Collin is a great picture. Thanks for sharing it with us. Kim B. in AZ

I love it because we are one week late in the Bible study rotation which gives me a week to read comments and decide what recipes to tackle.

I don't enjoy cooking, but my favorite chicken salad is La Madeline's. If there's any way to copy their recipe, it's a good one! I think they use their rotisserie chicken (did I spell that right? I don't think I've ever written that word down!).

Cute picture!!!

I had to laugh when you made the comment about my mom being so hilarious and fun to talk to....I agree. Sometimes one of us will say something - and before the sentence is even finished we are laughing so hard we cannot even finish the conversation. Except of course, when talking about food....that's serious conversation...well, sometimes! :)

Ok...forgot to share my Chicken Salad recipe with you. I make it very simple but my friends and family rave on an on about it so...try it and decide for yourself.

I boil a whole chicken as I make several dishes at once. Boil the chicken with celery, onion, carrots, kosher salt and whole peppercorns. Once the chicken is done and has cooled, prepare the amount you would like by shredding the chicken as finely as possible. Add enough mayo to the shredded chicken to make it creamy (it has to be Hellman's...I am usually not a "brand" girl but this is a must).

Add the following ingredients to your liking:

IF I make about two cups of chicken I will add about:

1/4 cup chopped pecans,1/4 cup chopped red grapes,1/8 cup finely chopped onion, and about 2 tsps. sugar. Salt and pepper to taste. Mix thoroughly. Add more mayo if the mixture seems dry.

I serve this on croissants, crakers etc.

I hope you enjoy this!!

My favorite chicken salad recipe has no measurements:

chopped celery
chopped vidalia onions
chopped cooked chicken
Cashews
Miracle Whip

Mix the first four ingredients, add Miracle Whip until you get your desired wet/dry consistency. Salt and pepper to flavor.

I'm a Miracle Whip gal, but I imagine it'd be good with mayo too. Oh...I've been in a crunch and had no celery and used diced cucumbers instead. It had a softer texture, but the flavor was really nice.

This is my fave chicken salad:

1 can of chicken, drained
1/3 cup mayo
1/3 cup finely chopped cashews
1 finely chopped fresh apple

Serve on sourdough bread.

Also, you can substitute 1/2 the mayo with sour cream to any chicken salad and it makes a huge difference in the taste. Yum!

Melissa,
I love adding stuff to a chunky salad, but I do a little catering for friends only and the best, most simple chicken salad goes like this:

Boil 5-6 chicken breasts and 5 eggs. Chop chicken very finely (I run it through the food processor). Add to chicken: 1 heaping teaspoon of sweet pickle relish, 1 teaspoon sugar, salt and pepper to taste, and enough mayonnaise to make it smooth. After everything is combined, add finely chopped eggs (an egg slicer produces a good size). Taste it at this point and adjust salt and pepper.

This recipe makes a ton and is just as wonderful served in phyllo cups at a wedding reception as it is on white bread standing up in the kitchen! Enjoy!

Here is my absolute fave chicken salad recipe.

Greek Chicken Salad....

4 boneless, skinless chicken breasts (cooked whichever way you want too.. I grill it)chopped,
1 jar of kalmata (Greek)olives, rinsed and drained
1 red onion, finely chopped
1 bunch of parsley, finely chopped
1 small-ish block of Feta cheese, crumbled.
1 English cucumber, diced.

And because most of the ingredients are so salty, I mix equal parts mayo and plain yogurt with dill, lemon juice and garlic, and that is the dressing. Serve with lettuce in pita bread and you are all set. :)

Dangit.. Now I want some. :(

http://thepioneerwoman.com/cooking/2008/05/chicken-salad-the-way-i-like-it/

Now this is for Beth -
I am a volunteer in LPM's resource dept with Di and Evangeline! Several months ago my 3 yr old granddaughter asked me where I was going. I told her I was going to see my "best friend, Beth!". I then told her I was going to lunch with my friends too. (I went to lunch with some other volunteers that day). So yesterday,(quite a few months later) my granddaughter looked at her daddy and coming from out-of-nowhere said, "Daddy, who is Beth?". My son-in-law replied, "Lily, I don't know anyone named Beth". Lily replied, "Yes, you do. It's Mammy's best friend and she eats lunch with her everyday!!"
My daughter called me and we were rolling with laughter! I told my daughter that it thrilled me to think my granddaughter thinks Beth Moore is my best friend and we have lunch every day!!
Thanks Beth and all the LPM staff for being our "best friends"!!! We love you!!

Holiday Chicken Salad Recipe

Serves 12

INGREDIENTS
4 cups cubed, cooked chicken meat
1 cup mayonnaise
1 teaspoon paprika
1 1/2 cups dried cranberries
1 cup chopped celery
2 green onions, chopped
1/2 cup minced green bell pepper
1 cup chopped pecans
1 teaspoon seasoning salt
ground black pepper to taste

DIRECTIONS
In a medium bowl, mix together mayonnaise with paprika and seasoned salt. Blend in dried cranberries, celery, bell pepper, onion, and nuts. Add chopped chicken, and mix well. Season with black pepper to taste. Chill 1 hour.

This is absolutely the best ever, and at times I used red/green grapes cut in half instead of the cranberries.

Lovingly,
Yolanda

PS: Thank you so much for the updated picture; and for all that you do for each one of us!

Hey Melissa,

Here is my chicken salad recipe. It isn't very fancy but always gets great reviews when I serve it at our mom's prayer group.

Chicken shredded - however much you need.(it can even be from the can but I know you dad wouldn't have that so you can boil, grill, bake which ever you prefer)
Toasted pecans, celery, red grapes, touch of onion powder, salt and pepper to taste, mayo. You just mix it all together and serve. I love doing these as a panini with whatever cheese you like. You can also do it like a regular sandwich with tomato and lettuce. Very simple but great. Thanks for the picture! I can't believe it has been 5 months!

Lord bless,

You're killing me with the cake!! My mouth waters just reading the recipe...

My child is autistic, & we don't do gluten (Flour). But it is soooo worth it. The grown-up's in our home (who actually stick to it) feel better too.
So for our chicken salad, we use Ezekiel or Genesis breads that are made with sprouted grains, or on top of dark leafy salad greens - yum!
We like a fruity Chicken salad with tart green apples, & purple grapes, with celery, & onion (purple of course - kids need color!) sometimes we have more "stuff" than chicken.. with mayo, salt & pepper. I must confess that I use can chicken. canned in water, & sea salt of course...I am priviledged to have the time to make the salad! Thank you JESUS a person can make good choices, & have a bit of convienience too!

Someone please try that cake & enjoy every calorie for me!!
can't wait for San Antonio!

1 cup each of celery, onion , apple (mack's or delicious)

1 cup of dried cranberries
1 cup walnuts.

The dressing
1/2 cup of ranch dressing

Chicken salad is my favorite!

This is the best recipe I've found...its the whipping cream. Its light and not too mayonnaise-y.

3 cups diced chicken breast (I use a rotisserie chicken from the supermarket)
1 cup sliced green grapes
1/2 cup toasted slivered almonds
2 T minced fresh parsley
1 c mayo
1/2 c whipping cream, whipped
(you can also add celery if you like it--I don't-- and you'll want to add salt and pepper if you don't use the rotisserie chicken)

I like this so much I eat it right out of the tupperware container...

Woooo I love chicken salad and this is one of my favorite recipes courtesy of the Barefoot Contessa, Ina Garten off Food Network. It is soooo good!

**(If I'm in a hurry I buy a grocery store rotisserie chicken and its just as good)
2 split (1 whole) chicken breasts, bone in, skin on (1 1/2 pounds)
Good olive oil
Kosher salt and freshly ground black pepper
1/2 cup pecan halves
1/2 cup slivered almonds
1/2 cup good mayonnaise
1/2 cup sour cream
1 tablespoon chopped fresh tarragon leaves, divided
1 cup green grapes, cut in 1/2
Lettuce leaves or tomatoes with pulp removed and drained well, for serving

Preheat the oven to 350 degrees F.
Place the chicken breasts, skin side up, on a baking sheet and rub them with olive oil. Sprinkle generously with salt and pepper. Roast for 35 to 40 minutes, until the chicken is cooked through. Set aside until cool.

When the chicken is cool, remove meat from the bones and discard the skin and bones. Cut the chicken into a 3/4-inch dice.

Meanwhile, place the pecans and walnuts on a separate sheet pan and toast in the oven for 7 to 8 minutes until golden. Set aside to cool.

For the dressing, mix together the mayonnaise, sour cream, 2 teaspoons salt and 1/2 teaspoon pepper. Fold in half the chopped tarragon leaves.

Place the diced chicken in a bowl, add the pecans, walnuts and grapes. Pour the dressing over the chicken and toss well. Sprinkle the remaining chopped tarragon leaves on top.

Yummy...I may make this tonight for my lunch tomorrow. Love the new picture of the Fitzpatricks.

Melissa,
I may be biased, but I believe that I have the best chicken salad recipe. Hopefully this is not too boastful or prideful. It is just yummy.

I just sort of wing the recipe so you can "tweak" amounts to your liking.

2-3 split chicken breasts; place on stone or cookie sheet pan drizzle evoo, kosher salt, pepper. Bake in 375 degree oven for 35-40 minutes until the chicken is done. Let cool, then cut off bone for salad.
1/4-1/2 c. mayo
1-2 T. miracle whip (this can be ommitted-not a must)
1-2 T. honey mustard
1/2-1 tsp. curry powder
salt and pepper to taste
1/4 c. finely chopped celery (if you don't like celery, you can omit)
1/4 c. finely chopped, TOASTED pecans. Toast in 350 oven for 7-10 minutes until you smell them.
1/4- 1/2 c. sliced red grapes

Mix together and enjoy. It is especially scrumptous on a croissant.

Hope you like it as much as we do at our house. Happy cooking.

You and Colin are gorgeous!

And I say thank you for asking for the Chicken Salad recipes - I can't wait to try some of those listed.

We have some of the best chicken salad here in Middle Georgia and it is made at a little podunk place called
"Georgia Bob's." Get a visual of that! They also serve delicious pork BBQ.

I've tried to replicate his recipe, and my husband says it's pretty darn close. I discovered that the secret is the texture. So, I put the chicken in my Kitchen Aid food processor and process it very fine. Then I like to add what I call the "crunch:"

Chicken Salad
* I use 1 deli roasted rotisserie chicken (de-boned and ground in food processor)
* 1/2 to 3/4 cup of Georgia pecans, chopped - you may toast them as well
* Hellman's mayonnaise - not measured, just use it until you like the way it mixes
* salt/pepper
* celery chopped very fine - about 1/4 cup.
* sweet pickle relish - about 3 T.

Thank you Melissa!

Your sister and Georgia friend,
Georgia Jan

"In a medium bowl combine chicken, celery, cucumber, and green onions. For dressing, stir together mayonaise, lemon juice, tarragon, and 1/4 tsp. salt. Pour over chicken mixture; toss to coat. Cover and chill for 1 to 4 hours."

Unbelievably long post, I know:)

Hi,
I never even liked Chicken Salad until I tried this recipe. I was throwing a baby shower luncheon at my tiny little apartment and this is what I made. It was a huge hit and we have loved it ever since! It comes from a Longaberger (as in baskets) cookbook.

Popeye's Honey Pecan Chicken Salad
1 Cup Mayonnaise
1/2 cup relish
2 Tablespoons minced onion
1 Tablespoon honey
1 1/2 Tablespoons sugar
1 teaspoon salt
1/4 teaspoon white pepper
3/4 cup chopped celery
3/4 cup toasted pecans, coarsely chopped
4 Cups chopped cooked chicken (it's so easy to purchase one of those rotisserie chickens from the store for this recipe!)

Combine the mayo, relish, onion, honey, sugar, salt, and white pepper in a bowl and mix well. Stir in the celery and pecans. Fold in the chicken. Adjust the seasonings to taste. Chill, covered in the refrigerator. Serve on Kaiser or French rolls with potato chips and carrot sticks, or on a bed of salad greens, garnished with a bunch of red grapes. Serves 6-8.

Simply dreamy!

Hey Melissa ...

The picture of you and Colin brought tears to my eyes ... so beautiful and happy together. Don't ever let anyone tell you that the honeymoon won't last ... it can. My precious husband and I will celebrate 20 years of marriage in December. I cannot believe how time flies when you are having fun. I am more in love with him now than I was the day I married him and I thank God daily for giving me the privilege of being his wife. I tell my daughters constantly that I still have a crush on their daddy! (To which they always roll their eyes and say, "We know!") So enjoy every day with Colin and believe in your heart that the best is yet to come!

Regarding chicken salad ... I don't have a particular recipe that I always use, but I am fanatical about using dill weed in my chicken salad. To me, it is the perfect complement to a good chicken salad!

Blessings,
Renee

Mama Beth I just have to tell you about something I saw today. I was coming home from "town" (this is what we southerners call the local city) here in HOT northern GA and on a sign this is what I saw "BETH MOORE". Oh my goodness!!! I was like where, I don't see her. I almost had a breakdown. Then following that was an advertisement (is that the correct word) for the Live Simulcast coming up this weekend at one of our local churches. For just a brief moment I was like going crazy trying to find you. Kinda funny if you think about it.

I wanted to tell Melissa if her and Colin have not gone yet and they have time they should go see the Laser Show at Stone Mountain Park. It is cheap ($8.00 per car) and a wonderful way to spend the evening together. Bring a picnic supper and chill. But get their early to get a good spot on the lawn. This is the 25th Ann. for the show so they have changed it somewhat.

I hope ya'll are having a blessed day in the Lord.

My favorite chicken salad is the easiest why I know but its great. I think the key is it has to be cold. I use canned chicken and add miracle whip(not mayo) chopped celery and and little salt and pepper. I can't get enough and I'm making myself hungry just thinking about it.

I can't wait to see you all in just a few weeks in San Antonio.
My chicken salad is just too simple....dill relish, chopped onion, real mayo & boiled egg.
I like chicken salad with the grapes and almonds in it, but my husband won't eat it that way, so we just have it the plain old boring way.
I'm loving looking at all the recipes though. Yummy!

Here is a recipe I use often for chicken salad. I do it to taste so I don't have any measurements. However, I know all of the siestas can work around that. Either grill or bake the chicken (I love stoneware). Then cool and chop it. Add sliced grapes, chopped celery (no food processors!), chopped sweet pickle, toasted almonds, and mix with ranch dressing. Having become an organic food lover, I use all organic foods (including the dressing). Mix it to taste. Sprinkle with just a touch of fresh dill, chill, and enjoy! It goes beautifully with a salad of baby spinach greens, or baby spring lettuce mix, add sliced strawberries, some blueberries, (or whatever berries are in your house), some toasted pine nuts and a little rasberry-balsamic vinegar dressing. What a great easy meal.

Thanks fo rdoing this, Melissa. I am thrilled about the new ideas!

Beautiful Picture of the Fitzpatricks...

I make this variety of chicken salad and it is delicious -

It takes three or four breaded, fried chicken breast tenders shredded.

Add 1 medium sweet apple, peeled and chopped, along with about 1/2 c. dried cranberries, (and if you feel daring a few halved grapes...). Add a tablespoon or two of light miracle whip and mix well.

Season lightly with salt, pepper, and celery salt as desired.

Serve on toasted croissants or a bed of lettuce with a side of mixed fruit. DELICIOUS!

Blessings.

First of all - what a sweet picture of you two.

Second for a chicken salad recipe:
I will first apologize that I don't have the exact measurements because it all depends on how much you want to make - so you just go with the flow in measurements.

(1) Chicken breast (6 makes more than enough...almost enough to feed a small army. 3 is enough to last several days for 2 people)
(2) Dried Sweet Cranberries – cut the pieces in half
(3) Chopped Pecans -
(4) Mayo - enough to keep everything together. If you do brave the 6 pieces of chicken you could easily go through 2 to 3 cups of mayo (I use light Mayo with this recipe because it is better than Hellman’s - but I use Hellman’s light for everything else...weird I know)
*********Boil the chicken, let it cool and just shred/peal apart with your fingers then mix all other ingredients together. Chill and then serve on bread, or on top of a bed of lettuce, or with Ritz baked crackers... Or it's just eating with a fork right out of the container.

I know this sounds more complicated than it is, but it's really just Chicken, Mayo, Nuts, and Dried Sweet Cranberries. All measurements just depend on how much you want to make and eat.

Happy Eating

However, I'll keep these links cached and put 'em on the menu for the school year when I resume my role super-mom. In the unlikely event, that you slip into the "too hot to cook" mode, I enjoy the burgers and funnel cakes at Stone Mountain each year when we make the trek to Snelleville to visit my Grandparents. This is from my cooking blog, http://whatwouldmarthacok.blogspot.com (It's about Martha in the Bible, not the cooking guru--just a little inside info).

Fancy Chicken Salad
3 cups cold, diced chicken
1 cup finely chopped celery
1/2 cup Almond Accents
2 1/2 tablespoon minced parsley
1 cup sliced seedless red grapes
1 teaspoon salt
1 cup mayonnaise
1/2 cup whipping cream, whipped

Combine first 7 ingredients and fold in last. Chill until ready to serve. Serves 8. Makes wonderful croissant sandwiches. Great on a bed of lettuce with crackers on the side as well. Serves 4-6. Perhaps, you could serve it with these for company. This for dessert would be yummy, too (we used 8 oz. non-fat plain yogurt in substitute for 1 bar cream cheese for this recipe, and it was great)! Then go for a 10 mile run to work off the calories.

PS What a lovely couple you are!!

What fun to read all the recipes!

We have a darling girlfriends spot for lunch in our area...that now has men invading the pink and fru-fru because the chicken salad served on homemade bread of your choice....even croissants is famous! You can even buy it to take home...but at close to $10. a pound... I end up copying their recipe and making it at home. A couple of siestas have already mentioned dried tarragon...and that's their secret too.

Add to any mayo based "plain" chicken salad...dried tarragon to taste ( I always add a lot) and very finely diced mandrin oranges. The last additional ingredient is very fine shredded mild cheddar cheese. Make this up a day in advance of serving and the flavors will gel while in the frig. It's the best!

And please post the pasta..spinach recipe. I'd love to try it!

Melissa - I hope you read this - this is Susan in Savannah - the one who lived in France for 15 years. In fact my daughter and I are headed back for a visit - she leaves Sunday and I join her for 2 weeks on the 13th. I have a chocolate cake receipe which you must try. It is French and I promise you will love this as will every one you serve it to. This is a staple and so quick and easy that it is a last minute dessert when people are here last minute for dinner:

Chocolate Mousse Cake

250 grams (9 0z) dark chocolate (Ghirardelli is good)
4 eggs separated
125 grams butter (1 1/8 stick)
60 grams flour (1/2 cup or a tiny bit less)
150 grams sugar (3/4 cup)

Preheat oven to 300 degrees

Melt chocolate in double boiler with a bit of milk so it doesn't stick. You know, a couple of teaspoons - whatever - don't be nervous! Once it is completely melted (and you don't have to use a double boiler - it is quicker without - but safer with - you just don't want to burn the chocolate!) take the melted chocolate off the heat. In the same pan, add the butter and stir until completely melted. Cutting the butter into small pieces helps this process along nicely. Then add 4 egg yolks one at a time - stirring completely so that they incorporate nicely but also they don't cook and curdle - yuck! Then stir the sugar in, then the flour. Beat the egg whites until they are stiff and GENTLY fold them into the chocolate mixture. Pour it into a round cake pan that was nicely greased. Cook for about 25-30 minutes. This cake should be very very soft in the center - it is supposed to be a mousse cake. So if you use a tooth pick it should come out with chocolate on it. The outsides of the cake should be gently cooked and the inside yummy almost runny - not quite runny. Its hard to write - kind of have to just do it. Then dust it with powdered sugar. You can not transfer this cake - just cut it in the pan and people will give you whatever you ask them for afterwards!! They will swear eternal allegiance to you - maybe it is a good evangelism tool - give to nonbelievers and tell them this cake is proof that God exists - you will have many converts! Maybe I should call this a "Jesus Cake"! Good luck! - Susan in Savannah

Greetings, Siestas,
I'm a bit late to the chicken salad recommendations, but I thought I'd add my 2 cents since I didn't see one of my key ingredients listed in any of the recipes.
I start with the Ina Garten method of cooking chicken breasts. This is a great method for not just chicken salad, but also for soups, chicken chili, etc.
Here's my favorite way to make the salad
Chicken in small chunks, cooked ala Ina Garten
(Here's the secret ingredient)
1 can of artichoke hearts, roughly chopped.
1 sm can of chopped black olives
a couple scoops of Hellman's Canola mayo
dry ranch seasoning to taste (I love ranch, so I tend to put quite a bit in)
Mix all together and let sit a bit, serve on toast, salad, plain, however you like.
***I should add that artichoke hearts are a staple in my pantry at home (along with coconut milk and about 50 different spices from Central Market). My Mom once laughed at me when I asked if she had any chokes at her house. She doesn't cook much.

It is a blessing to share the work of our hands with others, and see how they enjoy. Here is my Chicken Salad recipe:

2-3 chicken breasts
3 large cloves garlic
1/2 onion
1 c slivered almonds, toasted
1 small can of mandrin oranges,
drained
1/2 lb red seedless grapes,
cut in 1/2
3/4 c real mayonaise
2 T white vinegar
1/4 c sugar
salt and pepper to taste

Place 2-3 chicken breasts in a pot. Season with 1 cube chicken boullion, 3 large cloves of garlic, smashed, and about 1/2 an onion. Boil until cooked through. Let cool. When cool, shred the chicken. While cooling chicken, toast slivered almonds. Cool. When ready to assemble salad, place shredded chicken, almonds, oranges, and grapes in bowl. In small bowl, mix mayo, salt/pepper, vinegar and sugar. Pour over chicken mixture, gently toss to coat. Mix at least a half day ahead, and it is great the next day. Serve with desired bread, or on a bed of greens.

Enjoy!

Melissa--This is one of the best chicken salad recipes!! Try it! (I put the walnuts and the spinach on the side rather than as part of it). In Him--Shelley

Chicken Cherry Pasta Salad

1 tablespoon vegetable oil
1 (2.25 pound) frozen boneless skinless chicken breast strips
1 (16 ounce) package dry Gnocchi Pasta
¾ cup thinly sliced celery
¾ cup chopped red onion
1 (5 ounce) package dried cherries
1 ¼ cups mayonnaise
1 ¼ cups Girard’s Poppy seed dressing
1 ½ teaspoons salt
¼ teaspoon black pepper
4 cups baby spinach stems removed
1 cup coarsely chopped walnuts, toasted
Curly leaf lettuce

Heat oil over medium heat. Brown chicken stripes on all sides, until juice runs clear (about 15 minutes); drain. Cool; cut into cubes. Cook pasta in boiling salted water according to package directions. Rinse with cold water; drain. Combine chicken, pasta celery, onion and cherries. Combine mayonnaise, poppy seed dressing, salt and pepper. Fold in 1 ¾ cups dressing into salad, reserving ¾ cup dressing. Refrigerate, covered, several hours or over night.

To serve: Fold in spinach and walnuts; add remaining dressing as needed. Spoon into lettuce lined bowl.
Amount: 16 (1 cup) servings or 8 (2 cup) luncheon servings.
Tip: 4 cups cooked chicken may be purchased in meat department or Sam's has a Grilled Chicken.

I just boil my breast it is easier for me. I have buying chicken tenders frozen and then baking in the oven.

POPPY SEED DRESSING

3/4 cup sugar
1/3 cup vinegar
1 1/2 tablespoons onion juice
1 teaspoon dry mustard
1/2 teaspoon salt
1 cup vegetable oil
1 1/2 tablespoons poppy seeds

Hi Melissa,

I am WAY out of the loop on these posts as I've been out of town for my 25th anniversary (don't even get me started with how wonderful it was!). My study girls are doing our fourth meeting tomorrow night instead.

Just wanted to say that I really appreciate your giving a shout-out for chicken salad recipes. I'm always on the look out for good ones.

If you are ever in the Dallas area, try Cafe Max for their chicken salad. I've tried to find the recipe and recreate it, but I've not been completely successful (close enough to eat, though!). It is a mix of roast chicken, pears, apples, walnuts and green and red bell pepper. I've never been able to put my finger on exactly what's in the sauce, but I think it's a mixture of cider vinegar, cilantro and apple juice, with a touch of liquid smoke - yep, you read that right! It's really different since it contains no mayo, and unbelievably delicious!

If you ever run across an actual recipe for it, let me know!

See you in SA!
Love to you this day,
Melinda

I never post, but when I read your recipes- I knew I needed to! The Peanut-butterscotch bars are SO SO SO yummy! I make them- a slightly different variation of them though using rice krispies... They are so yummy!

As far as a Chicken Salad recipe... It's not as much as recipe as it it ingredients...

Boneless chicken breast cooked (I boil them)
Break up the chicken breast, add mayo, salt and pepper, celery, and cut up dried apricots... Serve on croissants spread with apricot jam. They are delicious!! A place I go for "tea" used to serve them- and I liked them so much I came up with a copycat recipe. :)

Just wanted to let you know I'd gladly volunteer to be your taste tester when you make chicken salad!

My family enjoyed the Swiss Chocolate Cake and it was beautiful! (I iced the sides too) I put some of the grated Hershey bars on the top and my dear ones oohed and aahed like I'd created a masterpiece! The masterpiece did not last long with two teens at home! And I made the quiche even though we were meeting in the evening - de-li-cious! I will definately make it again!
We always have a tea party type luncheon for our first day of school and this year I added the cucumber sandwiches to the menu. Oh my, how can I be 42 and have never tried this delectable creation? Wonderfully delicious.

Again, thank you for including recipes for this study. If Mama Siesta hosts a contest for most times the salsa has been made, my thirteen year old has to be close to making it as many times as she is old...

Hi Melissa,

Well, this is hilarious....
Today I finished The Stepping Up Bible Study with a group of my girlfriends here in Rockwall, Texas. After the story that your mom told about the song that Travis sang "Every Broken Road", I have been praying all day for you to find a great hubby.

Low and behold, I logged onto the blog tonight (which I have obviously never done before), and there you were with a picture of your new hubby. I guess God answered my prayer in retrospect....would love to hear the story of how you two met....Hopefully your mom will tell it sometime. Blessings to you and your husband.
